Will travelling to another country affect my application for K1 visa for my fiancée?

I intend to file for a K1 visa for my fiancée after a year. We started our relationship in 2007. I have visited and regularly communicate with her through emails and phone calls. We are planning to meet and take a vacation in one of the Caribbean islands. I would like to inquire if this would affect my application for a K1 visa.

You can meet your fianc anywhere you would like. It is in your best interests to meet in person and see one another as much as possible. It will only help your case that you vacationed together. I highly recommend that you save the records related to this travel including invoices, receipts, photographs, etc.

From what youve described, it sounds like over the years youve spent a considerable amount of time with your fiance. This is exactly what you need to have to support a good application to get your fiance a K1 visa. The trip to the Caribbean together will only help that application more.
